Darryl was born in August 15, 1970 in Port of Spain, Trinidad & Tobago and spent his primary school years growing up in the warm and sunny climate of the Caribbean.
After coming to Canada in the fall of 1988 Darryl later attended the chef apprenticeship program at Humber College.
Darryl has had the experience of working with accomplished chefs such as Olaf Martin, founder of Ten Restaurant and On the Curve in Mississauga and Tom Fields, former Executive Chef at the Mustard Grille Restaurant.
Darryl held the Executive Chef position at Cognitos and Willie Bee’s, a well known hot spot for fine dining in downtown Oakville during the 90’s.
Since May 2007, Darryl has had the pleasure of pursuing his passion for food and the culinary arts as Executive Sous Chef for Encore – Food with Elegance.
Darryl currently lives in west end Toronto with his wife and teenage son and enjoys his free time up north on the water.
