Cuban born chef Pedro Quintanilla, brings a passion and uniqueness to his cooking, which he admits has a lot to do with his native land and the influence of his ‘abuela’ (grandmother) who taught him at an early age the art of Cuban cooking.
After completing his studies as a Chef, Quintanilla worked in some of Havana Cuba best restaurants. In the early 90s, Chef Pedro immigrated to Toronto, where Latin cuisine was still new but gaining in popularity. His first stint was as assistant chef at Xango Restaurant, cooking with one of the creators of the Nuevo Latino style, Chef Douglas Rodriguez from New York City. In the mid 90’s he moved to Latitude Restaurant, where his innovative style earned him 3 stars rating in the Toronto Life Magazine and a several television appearances on the Food Network.
Since 2004 Focaccia Restaurant patrons have enjoyed his unique blend dishes. His emphasis remains focused on his Cuban roots. All his dishes are prepared with an infusion of fresh herbs, spices, delicious sofritos and sauces.
Cooking is truly a passion for Chef Pedro, who says that his happiest moments are when he is in the kitchen creating new recipes and watching customers enjoy his food.
